Ham and Bean Soup

Serves 6-8
Ingredients
8 cups Vegetable Broth
2 15.8 oz cans of Northern White Beans drained
2 medium carrots chopped
1 cup yellow onion chopped
2 celery stalks chopped
2 cloves of garlic finely chopped
2 bay leaves
2 cups leftover smoked ham chopped (you can add more if you prefer)
Fresh ground white pepper to taste
Preparation
In a large pot melt 2 tablespoons butter and add carrots, onions and celery sauté till soft or about 5 minutes. Add garlic and sauté 2 minutes careful not to burn.
Add vegetable broth, 2 cans white beans, chopped ham and bay leaves with ½ teaspoon white pepper. Bring to a boil and then simmer 40 minutes. Serve with your favorite crusty bread for dunking.
