Chilled Melon Soup with Goat Cheese Cream and Fennel Pollen

Pairs Well With

Ingredients

6 cups chopped cantaloupe, about 1 (4 pound) melon

1 1/2 cups orange juice

1/4 cup fresh lemon juice

1/2 cup fresh lime juice

6 tablespoons honey

1/4 teaspoon salt

1/2 cup Goat Cheese (Laura Chenel brand from tub preferred.  Tends to be creamier)

2 TB Cream

Fennel Pollen

Preparation

Chilled Melon Soup

Blend all ingredients in blender till smooth:

6 cups chopped cantaloupe, about 1 (4 pound) melon

1 1/2 cups orange juice

1/4 cup fresh lemon juice

1/2 cup fresh lime juice

6 tablespoons honey

1/4 teaspoon salt

Adjust seasoning.  Can be made day ahead.  Wisk before serving


Goat Cheese Cream

Combine both ingredients.

1/2 cup Goat Cheese (Laura Chenel brand from tub preferred.  Tends to be creamier)

2 TB Cream

Do not over mix. Add more cream to get the desired consistency. Add desired amount on top of melon soup.

 

Fennel Pollen
Add a pinch or two per serving onto of Goat Cream
