She made the salad for us and told us she first had it at the Union Square Cafe. She asked for the recipe and they referred her to their newsletter. Since then we have found many different takes on the recipe but the original is by far the best. Crunchy, cold, and wonderfully refreshing. At our house it’s referred to as Kaija’s USC Salad. And we rarely have leftovers!”
