Pan Grilled Pork Loin Chops with Farro
Serves 4
Ingredients
4 boneless Pork Loin Chops, about 5-6 ounces each or about an inch thick.
1 T olive oil
1 T butter
1 package Trader Joe's 10 Minute Farro or two cups of cooked Farro
1 medium Fennel Bulb, trimmed and thinly sliced/chopped
1 medium yellow onion, chopped
2 large garlic cloves minced
1 large carrot, chopped
1/2 lemon juiced
1 T lemon zest
Preparation
For the Pork Chops:
Heat a grill pan to medium high. Dry off chops and then season with salt (if using), pepper and Dash seasoning of choice-we used the Original. Sear 3 minutes on each side, making sure they are done, and let rest covered by foil on a separate plate.
For the Farro:
Cook according to package instructions using either water or low sodium chicken broth. Drain and set aside.
For the vegetables:
In a large saute pan add olive oil and butter over medium heat. Increase to medium high and add chopped fennel, onion and carrot. lower heat and saute for 5 minutes, Add garlic and saute for another 5 minutes. Stir in the drained farro along with tne lemon juice and zest. Take off heat and let sit for 5 minutes. Serve alongside pan grilled pork chop.
