Prune Bars
Pairs Well With
Ingredients
1 cup pitted prunes (or dried plums as they are called now)
1 cup chopped walnuts
1 cup firmly packed brown sugar
¾ cup all purpose flour
1 ½ teaspoons baking powder
¼ teaspoon salt
3 eggs, well beaten
Preparation
Chop prunes. Add to chopped nuts with brown sugar, flour, baking powder and salt. Mix. Fold into well-beaten eggs. Spread in greased 9-inch square pan. Bake at 325 degrees for 25-30 minutes. Cool in pan 5-10 minutes. Cut into 24 pieces (1inch by 3inches). Roll in powdered sugar if desired. Editor’s note: you may also roll in unsweetened cocoa for a bit of a modern twist.
