Pan-Seared Filet Mignon with Blue Cheese Butter

- 4 filet mignon steaks (1 1/2 inches thick)
- Salt and pepper to taste
- 4 tablespoons unsalted butter, softened
- 1/4 cup crumbled blue cheese
- 1 tablespoon fresh chives, chopped

- Creamy Parmesan polenta
Preparation
- Season the filet mignon steaks with salt and pepper on both sides.
- In a small bowl, combine the softened butter, crumbled blue cheese, and chopped chives to make the blue cheese butter. Set aside.
- Heat a large skillet over medium-high heat and add a drizzle of olive oil.
- Add the steaks to the skillet and sear for about 4-5 minutes per side for medium-rare, or adjust the cooking time to your preference.
- Remove the steaks from the skillet and let them rest for a few minutes.
- Top each steak with a generous dollop of blue cheese butter.
- Serve with roasted Brussels sprouts with bacon and creamy Parmesan polenta on the side.
