Grilled Tri-Tip Steak with Smoky Chipotle Sauce

- 2 pounds tri-tip steak
- Salt and pepper to taste
- 1/2 cup ketchup
- 2 tablespoons adobo sauce from canned chipotle peppers
- 1 tablespoon honey
- 1 tablespoon apple cider vinegar
- 1 teaspoon smoked paprika

- Grilled corn and black bean salad
- Garlic-herb roasted potatoes
Preparation
- Season the tri-tip steak with salt and pepper on both sides.
- Preheat the grill to medium-high heat.
- In a small bowl, combine the ketchup, adobo sauce, honey, apple cider vinegar, and smoked paprika to make the smoky chipotle sauce. Set aside.
- Grill the tri-tip steak for about 6-8 minutes per side, or until medium-rare. Adjust the cooking time based on your desired doneness.
- Remove the steak from the grill and let it rest for a few minutes.
- Slice the steak against the grain and serve with a drizzle of smoky chipotle sauce on top.
- Serve with a grilled corn and black bean salad and garlic-herb roasted potatoes on the side.
