Grilled Skirt Steak with Cilantro-Lime Butter

Ingredients
- 2 pounds skirt steak
- Salt and pepper to taste
- 1/4 cup fresh cilantro, chopped
- Zest and juice of 1 lime
- 4 tablespoons unsalted butter, softened
- 2 cloves garlic, minced
Side Dish:
- Grilled corn on the cob with chili-lime butter
- Mexican rice
Preparation
- Season the skirt steak with salt and pepper on both sides.
- Preheat the grill to medium-high heat.
- In a small bowl, combine the chopped cilantro, lime zest, lime juice, softened butter, and minced garlic to make the cilantro-lime butter. Set aside.
- Grill the skirt steak for about 2-3 minutes per side, or until medium-rare.
- Remove the steak from the grill and let it rest for a few minutes.
- Slice the steak against the grain and serve with a dollop of cilantro-lime butter on top.
- Serve with grilled corn on the cob with chili-lime butter and Mexican rice on the side.
