Grilled Ribeye with Gorgonzola Butter

- 4 ribeye steaks (1 inch thick)
- Salt and pepper to taste
- 4 tablespoons unsalted butter, softened
- 1/4 cup crumbled Gorgonzola cheese
- 1 tablespoon fresh chives, chopped

- Grilled balsamic-glazed vegetables (such as bell peppers, zucchini, and red onions)
- Wild rice pilaf
Preparation
- Season the ribeye steaks with salt and pepper on both sides.
- Preheat the grill to medium-high heat.
- In a small bowl, combine the softened butter, crumbled Gorgonzola cheese, and chopped chives to make the Gorgonzola butter. Set aside.
- Grill the ribeye steaks for about 4-5 minutes per side for medium-rare, or adjust the cooking time to your preference.
- Remove the steaks from the grill and let them rest for a few minutes.
- Top each steak with a generous dollop of Gorgonzola butter.
- Serve with grilled balsamic-glazed vegetables and wild rice pilaf on the side.
