Grilled Flank Steak with Chimichurri Sauce

Ingredients
- 1 1/2 pounds flank steak
- Salt and pepper to taste
- 1 cup fresh parsley, chopped
- 4 cloves garlic, minced
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
Side Dish:
- Grilled zucchini and yellow squash
- Couscous with roasted vegetables
Preparation
- Season the flank steak with salt and pepper on both sides.
- Preheat the grill to medium-high heat.
- In a small bowl, combine the parsley, garlic, red wine vinegar, olive oil, dried oregano, and red pepper flakes to make the chimichurri sauce. Set aside.
- Grill the flank steak for about 4-5 minutes per side for medium-rare, or adjust the cooking time to your preference.
- Remove the steak from the grill and let it rest for a few minutes.
- Slice the steak against the grain and serve with a generous spoonful of chimichurri sauce on top.
- Serve with grilled zucchini and yellow squash and couscous with roasted vegetables on the side.
